Hummus pesto and pine nuts with a broccoli and kale burger

Ingredients

  • 240g chickpeas
  • 1 clove of garlic
  • 30g pine nuts
  • ½ lemon
  • 70g extra virgin olive oil
  • salt and pepper
  • Basil leaves
  • 2 packs of mini burgers with broccoli and kale

Hummus has its origins in the Middle East, but thanks to its distinctively spicy taste, its nutritional properties and easy preparation, it is a dish now widespread and appreciated also in the West.

 

The basic ingredients of hummus, for the most classic version, are chickpeas and the typical sesame sauce, called tahina. It can be enjoyed with bread croutons as an accompanying sauce as an aperitif or a snack. However, several versions also exist, as well as some variations with ingredients that differ from the original. Such as the recipe with pesto and pine nuts, ideal as an accompaniment to the mini burgers with broccoli and kale.

 

Method

  1. Toast the pine nuts for a few minutes in a non-stick pan until they are almost golden in colour.
  2. Put the toasted pine nuts, chickpeas, basil leaves, oil and clove of garlic into a blender.
  3. Blend the ingredients until you get a thick cream.
  4. Add lemon juice and salt and pepper to taste as required.
  5. In the meantime, cook the mini burgers with broccoli and kale in a pan over a medium heat for 7 minutes. Serve it all and enjoy this combination of flavours!
